Strawberry Cake Ice Cream

There is something so wonderful about being all wrapped up in a cozy blanket, eating cold ice cream in winter. Having an elephantine sweet tooth, I go ga ga over cakes. And when its Cake with Ice cream, I admit I am absolutely shameless. The best thing about this dessert is it can be made and frozen well in advance. (Not that it will  remain uneaten for a long time:-)). Imagine, just removing a dessert from your freezer and serving it to an unexpected guest. Or just feeding your sweet tooth when  the dessert craving hits on a lazy day. I would make this and stove it into the freezer just to have the comfort of having a dessert ready at hand anytime. Uuummmmm....

Mocha Praline Cake

The experimental basic sponge was successfully baked and I wanted to make some kind of new dessert with it. Think this was the thought that made me to cut it into narrow strips.(Not to mention my kids hovering around the cake asking for a bite). When I could not come up with that brilliant idea for the new dessert,  I went back to an old favorite, coffee, praline and the quintessential whipped cream. Irresistible...

Basic Sponge Recipe

I tried this Tarla Dalal recipe, new for me, with hesitation. All cakes I have made or tried so far had either butter or oil. This recipe was a pleasant surprise to me as the cake came out very spongy and with a great texture too. Found it a little too sweet for my taste though. So less sugar next time.. This cake is made with only eggs, flour and sugar - no oil, no butter. Will definitely try this out again.

Eggs 3 large
Plain Flour 80 gms
Powdered Sugar 80 to 110 gms
Method: Pre heat oven to 200 degrees C.  Sieve the flour, keep aside. Beat the eggs and sugar till very thick and double in quantity. Fold in the flour very gently with a metal spoon. Pour into a greased and dusted cake tin. Bake for 15 mins(Mine took about 5 mins more) till it passes the  skewer test. Remove from the oven. Loosen sides with a sharp knife, invert over a wire rack. Cool and use as needed.

Gooey Chocolate Cake

One of my colleagues, a mom-to-be,  wanted to eat a chocolate cake. I had once tried making ganache and it had turned out quite good. This was my attempt at making an elegant cake appealing to the female eye and the pregnant lady's palate:-)). I made my first chocolate leaves successfully and placed a real rose. In hind sight, I could have placed the leaves better and given the chocolate shavings on the sides a miss.

My First Black Forest Cake

My niece's birthday was approaching and my sister was gaining a little bit of confidence in my ability to bake a decent cake. So she took the risk and ventured to try out my cake for the birthday party. My niece Rachana wanted a Black Forest Cake. I had never made this before. Of course I forgot to mention this to my sis:-)). I was not about to lose my chance to bake the cake...

Perfect Icing Method

I usually use whipped cream for the filling. I have tried several times, but I am not able to get the perfect flat layer of whipped cream between the layers of my cake. I manage to cheat to a certain extent:-)) but would love to see see this perfection when I slice the cake. Any tips??

Vanilla and Chocolate Marble cake

Chocolate and Vanilla flavors in one cake, both vying for the attention of your taste buds. You could of course also make this with Vanilla and Pistachio, Chocolate and Orange...Add chocolate chips or nuts or both if you fancy...Yummm...

The recipe would remain the same as for the basic cake. Spread alternate layers of the two flavors. After this is done, gently swirl the batter through all the layers with a knife or skewer and then bake. Stick to whichever of the 3 methods given below works best for you.

Pineapple, Tutti-Frutti and Nut Cake

This is basically a pineapple chiffon cake which I also used once as a base for a pineapple fresh cream cake. I also like this cake as a snack for kids (and me:-) just as is or with nuts and tutti-frutti added as in the below recipe. Should also work if pineapple juice is substituted with orange juice and a little bit of orange rind. Lets try this out sometime. The original recipe says put all dry ingredients together in a mixing bowl, pour the wet ingredients in and beat well. Have not tried this, as I am scared the cake might become dense. Anybody tried beating everything together?

Flour 2 1/4 cups
Oil 1/2 cup
Powdered Sugar- 1 1/2 cups
Pineapple juice - 1 cup (Tropicana and the like)
Eggs - 8
Cream of tartar 1/2 tsp
Baking powder 3 tsp
Salt 3/4 tsp
Tutti fruity 1/3 cup
Chopped and roasted cashew nuts 1/3 cup
Yellow food color a few drops

Simple Chocolate Sponge Cake Recipe


Plain Flour I cup 
Cocoa powder 1/2 cup . I prefer Nilgiris Cocoa powder.
Powdered Sugar 1 1/4 cup
Oil 3/4 cup
Eggs 4 large(Use 5 eggs if they are very small)
Baking powder 2 tsp
Vanilla Essence 1 tsp
A pinch of cooking soda

Simple Vanilla Sponge Cake Recipe

My favorite sponge cake recipe from Nita Mehta. This recipe works very well for me, as it is very easy to make and keeps well out of the fridge for 2-3 days. You could also freeze the cake and use it for any recipe which calls for a sponge - Cake fudge, Ice Cream cake, Cake Trifle or any other cake based dessert.


Flour 1.5 cups
Powdered Sugar 1 1/4 cup
Oil 3/4 cup
Eggs 4 large(Use 5 eggs if they are very small)
Baking powder 2 tsp
Vanilla Essence 1 tsp

Honey Datsun With Ice Cream

Ate this famous Chinese dessert (mentioned as Honey Datsun with Ice Cream in the restaurant Menu) and got bowled over . The combination of the nuttiness of the toasted sesame seeds, the  ice cream and the crisp honeyed strips simply rocks! The best part is you can make the crispies and the honey sauce ahead of time and store. You will just need to put things together and you have a quick impressive dessert for your guests or a super treat for yourself on a lazy weekend.

Mock Chocolate Mousse

This may not be the real mousse - hence the name Mock Chocolate Mousse. This is part of a Tarla Dalal Dessert Recipe. Believe me, this elegant, easy, simple but tricky dessert can make a chocoholics day. Try it out if you are looking for a chocolaty indulgence.

Creme Caramel

One of my all time favorites, easy and yum. Got this recipe from Nita Mehta's Low Calorie Desserts. Here goes the recipe.

3 cups milk
9 tsp sugar(substitute with artificial sweetener to cut down calories further)
3 tbsp skimmed milk powder
1 tsp vanilla custard powder
3 eggs
1 tsp vanilla essence

For the caramel
 4 tsp sugar

My First Decorated Cake

I had baked a couple of cakes successfully and wanted to try decorating the cake. Was thrilled to get my piping bag and a set of 5 nozzles from Nilgiris. I love whipped cream for its delicate sweetness and lightness. But the catch was,I did not own a hand mixer nor did I know where to get whipping cream. I was so thankful to my neighborhood friendly Bakery for agreeing to give me some whipped cream. So,out came my first hand made cake board,my piping set and viola!! My husband and kids devoured the cake in no time .Was I proud of myself!

Whipped cream at home at last!

I finally got my own hand mixer. Did quite some running around for whipping cream as I found it very difficult to locate a store which sold the same. Eureka! Fatima Bakery on Hosur Road stocked it. So got my packet of Rich's non-dairy topping , searched for tips on whipping the cream on the internet. My first opportunity to experiment with the whipping cream and mixer was around the corner - Girish's birthday.

Racing Track Cake - For Anirudh's 6th Birthday

I wanted to bake and decorate Anirudh's birthday cake. He wanted a racing track for a cake. My daughter Aditi was about 10 months old at that time. My Mom dropped some subtle and some not-so-subtle hints  for me not to make the snacks at home as Aditi would sleep very little even at night and I was terribly sleep deprived. And making the cake too at home!!! I was surely going nuts!

Out came 2 small square cakes,put side by side on a make do cake board. I managed top get some whipped cream from the bakery and finally the cake took shape. It was a pistachio flavored cake, soaked in simple sugar syrup, filled and topped with whipped cream.

Made 3 flags reading MRF,CEAT and Anirudh respectively. The candles became the lights. A part of Anirudh's car collection went on the track.  The cake became too heavy for the not-so-strong cake board, and was left with a visible crack demarcating the cakes. I was just thankful, that the board did not give in on the way to the table:-)).  First  public appearance of my decorated cake successful!!

I have never had the idea of putting them on a blog or any place else other than my Picasa Album. I take pictures of these things, to savor the taste and the visual appeal later. But I do intend to put in my dessert, snack and other recipes as my blog would be incomplete without them.

I have started today!

Whew!! I have finally setup my blog. Have picked the template, added the gadgets and done away with all the technology stuff. Need to figure out a lot more things and that can be pretty tiresome for my technologically challenged brain,but it can wait. I just can't wait to share my experiments with you guys.

Having two hyper active kids,juggling part-time office work and  school home work,a passion for food comes as a delicious respite. Cooking is something I find extremely satisfying - gastronomically and otherwise. I keep finding new excuses to call someone over for cold coffee and sandwiches, freeze a cake ice cream for a rainy-oops-sunny day:-)),make some extra cake just in case my kids( read I ) feel like having a cake fudge, give just one more try to get the chocolate cigars right. Food is on my mind 24/7,food is a big part of my life - You get the picture.

Hubby and kids appreciate whatever I make(er..most of the times:-) and put up with my visits to supermarkets in search of the elusive ingredient.

I just can't resist posting a picture of one of my better-looking cakes,just so that you have a good first impression of me:-)) The others will follow.
I made this cake for my daughter Aditi's second birthday.  A basic vanilla cake,soaked in peach juice, filled with chopped  peaches and whipped cream.
